How to use a waterstone for sharpening?
1. Soak the stone in water for 10 minutes (a little less for smaller-grained stones, a little more for fine-grained stones).
2. Place the stone on a rubber stand or otherwise stabilize it so that the stone does not move during sharpening
3. Hold the tool so that the blade touches the whetstone at an angle of 15-20 degrees. Then, pressing the blade lightly, move it along the stone, pushing the tool away from you and towards you with uniform movements, all the time maintaining a constant angle of inclination. 3. Repeat on both sides of the blade until the entire edge is sharp and there are no burrs anywhere.
4. Wet powder is released during sharpening. Do not wipe or rinse it, just continue with the action you have taken. The powder looks unsightly, but it is this residue that sharpens the edge.
5. Finally, wash the knives in warm water and wipe them dry.
